King Arthur Masa Harina - this masa harina is wonderful. Almost flour-like, with a cornmeal flavor and a little bit of chew to it. I've been experimenting with it to the point of where it's almost all gone already lol. Mostly successes.Highly recommended.

It took me a moment to figure out how to press and roll the tortillas out (I do not have a tortilla press), but once I got a technique down, I can easily churn out tortillas. It mixes up quickly, and the texture is moist and soft. Waaaaaaaay better than the store brand sold at my grocer. I like to cook twice - the first time is to "set" the tortilla. Then I store them in my fridge until I'm ready to eat them, and I cook them a second time for whatever I'm making, whether tacos or a quesadilla or a "Mexican" casserole. Excellent flavor.

Making your own tortillas with masa harina is an experience that is not to be missed. I made 18 tortillas with just two cups of this corn flour. It is not the same as cornmeal at all. The tortillas were also great the next day heated up. I reheated two and filled them with some scrambled/omelet eggs. Delicious! I am so happy to have found this I will definitely get it again. This instant masa was fresh enough which was nice but it didn't have any specially nice organic flavor. It is a small enough bag that I wil use it all up before it goes stale. In fact I have been mixing it with white rice flour from the Mexi-mart to stretch it as it is a little spendy. This works if you make the masa with hot water. ( I refuse to eat GMO corn and I am gluten intolerant. ) You can also make as many tortillas as you need at a time and there is no waste if you calculate correctly. It's nice for tortillas that are tender and easy to eat for old people or small children. For making tamales, though, I would just go with whole dried corn, nixmalitize and grind in the food processor, rather than this instant stuff.

This smells and tastes great. I followed the recipe on the bag which I’ve had to tweak but the tortillas come out great! Happy I found this product.
